Суп-харчо по-грузинскиSoup kharcho - the well-known Georgian dish without which it is impossible to imagine ethnic cuisine of these mountain people. There is a set of recipes of preparation of soup kharcho from traditional to the recipes adapted for modern living conditions. We suggest you to prepare such option of the well-known soup kharcho.

Soup kharcho in Georgian

For preparation it is required:

At the rate on 6 portions
  • mutton or beef brisket – 1 kg
  • water – 3-3,5 l
  • rice – 210 g
  • beef fat or butter – 90 g
  • onions – 240 g
  • garlic – 20 g
  • tomato mashed potatoes - 90 g
  • tkemal – 120 g
  • mix of khmeli suneli - 3 g
  • parsley greens – 120 g
  • red siliculose pepper of 3 g
  • salt – to taste

Preparation:

  1. To wash up mutton brisket and to split into pieces on 50-55 g.
  2. To fill in with cold water and to cook to semi-readiness within about one hour.
  3. To chop onions, to fry it on beef fat about a tomato mashed potatoes and tkemal.
  4. To put rice, the fried onions, dried greens and salt in broth.
  5. In an hour to add siliculose pepper, garlic, parsley greens. Before giving to salt to taste and to strew with parsley greens.
  6. Soup hot, with a meat slice is served.

If for preparation of soup beef is used, it is necessary to increase time of cooking of meat approximately by one and a half times, and to fill broth with rice through an hour and a half after the beginning of cooking of meat. Spices are allowed to be replaced with allspice and bay leaf.
